This 'Microlot' is a coffee from an extremely small Costa Rican farm, where the diversity of climates and their impact on coffee production has led to a thriving coffee trade with a great reputation for quality.
Produced by the Salazar family in the renowned West Valley of Costa Rica, Los Cipreses is an exceptional specialty microlot grown at approximately 1,700 metres above sea level. The cool mountain climate allows the coffee cherries to ripen slowly, producing dense beans with remarkable sweetness, complexity, and clarity.
Cultivated from carefully selected varieties including Caturra, Catuai, SL-28, and Milenio, each cherry is hand-picked at peak ripeness before being processed using the traditional Honey method. By allowing part of the fruit's natural mucilage to remain on the bean during drying, this process enhances sweetness, creates a silky body, and develops a beautifully balanced cup.
In the cup, expect a vibrant and beautifully balanced coffee with bright citrus acidity and notes of crisp red apple, complemented by delicate hints of guava. A gentle floral touch of chamomile brings elegance to the profile, while smooth nougat sweetness creates a creamy, lingering finish. The result is a clean, complex, and exceptionally well-rounded coffee with remarkable clarity and sweetness.
