This coffee is the 74112 varietal and is grown under indeginous shade trees. The name 'Birbirsa' comes from the Oroomiffa language which is a widely spoken in Ethiopia. It is a name given to an indeginious shade tree which is only found in the region where coffee is produced, and directly translates to English as a "Tree which lives longer and has wide spreading branches".
21 smallholder farmers contributed cherry to this lot, who have an average farm size of 2 hectares. This natural processed coffee is dried on raised beds for a period of 21-28 days and then the lot is hand sorted by colour.
