A beautifully balanced Colombian decaf with all the character of a specialty coffee, without the caffeine.

Sourced from the village of Aipecito, near Neiva in Huila, Colombia, this coffee is a collaborative lot produced by three local coffee growers: Milton Garzón of El Shalon, William Lozada of El Paraíso, and Hernando Hueje of La Esmeralda.

The coffee is Castillo variety, grown at 1,500–1,650 masl and processed using the Sugar Cane (EA) decaffeination method. This process gently removes the caffeine while helping preserve the coffee's natural sweetness, aroma, and character.

In the cup, expect a smooth and approachable profile of brown sugar and chocolate, followed by juicy blueberry notes and hints of red apple. The finish is clean and sweet, with a light, delicate acidity that brings balance without overpowering the cup.
