El Higueron is an example of natural resilience as it grows over other plants to take root. Situated at an altitude of 1,700 MASL, the plant's roots form bizarre shapes over the cliffs and its shade spreads over vast areas. The plantation is a model of sustainability: rich biodiversity, careful shade management, minimal water use and full traceability of the produce - a true experience in the making. The coffee here is just as wonderful, with notes of stone fruit jam, caramel and crates an unforgettable experience.
